Healthy Homemade Pancakes & Waffles
It was time to create something Better than Eggos in my house. Don’t get me wrong, there is nothing easier than zapping a few Eggos before we are off and running. But it was happening more than I’d like to admit (insert almost everyday for my 8 year old;)
So I texted my bestie, who also happens to be a Registered Dietitian, and asked her what to do! I know I can’t pronounce a few ingredients on the back of the Eggo box, so I also knew it wasn’t my best option for a everyday breakfast for my oldest kid.
This is her healthy homemade waffle and pancake recipe. It was a big hit in my house!
1/2 cup white flour
1/2 cup whole wheat flour
1 T sugar
2 t baking powder
1/4 t baking soda
1/4 t salt
1 beaten egg or 1/4 cup applesauce
1 cup milk
2 T canola oil or coconut oil (a little more for waffle mix)
Combine dry ingredients. Combine egg, milk and oil. Pour wet ingredients into dry mix and stir. Optional: add smashed bananas or blueberries. Serve with 100% Maple Syrup.
